Kale Pesto






















When you buy kale it comes in bunch so large a lot of it wilts and turns yellow in the fridge before you can eat it. The first time I made this pesto was to avoid the waste, and we loved it. So I made it again. The great thing about pesto is that there is no cooking it is fast and you get all the nutrients your greens have to offer. I used some yogurt instead of all the olive oil that is needed to make it creamy. Put everything in a food processor and add as much of each ingredient that you would like.
Kale
Garlic
Parmesan Cheese
Walnuts (pine nuts or almonds would be fine too)
Olive Oil
Yogurt
Lemon Juice ( a few drops)
Salt and Pepper
