Turnip Bread

Turnips are sooooo good, I HATED them when I was a kid, my mom would make us eat them when we had a cold. It turns out they are a great natural source of vitamin C. Since Baby B and I have been fighting a cold (medicine free!) I have been including turnips in every meal (Sorry Baby B if you hate them too, but "Mama knows best!").  Last night I had the brilliant idea of making turnip muffins, with out eggs or dairy (both are best to be avoided when you have a cold)
so my "muffins" were more like bread, still very good, Mr. Baftani agreed.
Here is the recipe:

2 Medium Size Japanese Turnips (boiled and mashed)
1/3 Cup Unbleached All Purpose Flour
1/4 Cup Grape Seed Oil
1/4 Cup Honey
1 tbsp Chia Seeds (before soaking, after soaking they are more like 3 tbsp)
1/2 tsp Cinnamon
1/2 tsp baking soda
A pinch of salt

Try it!

  2. You are lucky to be able to afford ingredients like those. Most people can not.

  3. could you please share with me the quantity of mashed turnip you ended up with to use in this recipe? I have one very large turnip so I'm trying to adjust accordingly. Thanks!
