All I Want Today

It seems like everyone in North America is sick, including Mr. & Baby B. I am doing everything in my power not to get sick, ginger lemon tea and Oil of Oregano is a major part of my diet these days. Turnips are a very good source of vitamin C also, remember this turnip bread? What are you doing to stay healthy this flu season? did you get the flu shot?

Turnip Chips

Hi Friend,
I hope you had a nice weekend. I made some turnip chips that turned out very good, and it is so easy.
1 Turnip (makes 1 serving)
1 Tbsp Oil ( I used grape seed oil)
Salt and Pepper to taste.

Slice the turnip as thin as you can and pat dry them. Mix in a bowl with the oil, salt and pepper. Lay them out on a cookie sheet and put it in the oven at 350 for 30 minutes, but keep an eye on it. Honestly not all of them are going to be crispy, but they are still very good.

Remember this Turnip Bread?

Turnip Bread

Turnips are sooooo good, I HATED them when I was a kid, my mom would make us eat them when we had a cold. It turns out they are a great natural source of vitamin C. Since Baby B and I have been fighting a cold (medicine free!) I have been including turnips in every meal (Sorry Baby B if you hate them too, but "Mama knows best!").  Last night I had the brilliant idea of making turnip muffins, with out eggs or dairy (both are best to be avoided when you have a cold)
so my "muffins" were more like bread, still very good, Mr. Baftani agreed.
Here is the recipe:

2 Medium Size Japanese Turnips (boiled and mashed)
1/3 Cup Unbleached All Purpose Flour
1/4 Cup Grape Seed Oil
1/4 Cup Honey
1 tbsp Chia Seeds (before soaking, after soaking they are more like 3 tbsp)
1/2 tsp Cinnamon
1/2 tsp baking soda
A pinch of salt

Try it!
