Peach Pancakes

Hi Friend,
It has been a long time, I have a very delicious recipe for you today, Peach Pancakes with Chia and Flax Seeds. I made them last weekend and it was approved by Baby B.

What you need:
1 ripe peach (sliced thin)
2 cups flour
2 eggs
1 cup half and half (plus more if you need)
1 tbs chia seeds
1/2 tbs ground flax seed
1/8 tsp baking soda
a pinch of salt and cinnamon.

I learned the trick to make fluffy pancakes from my father in law Greg, separate the egg whites and beat them till it is a large fluffy cloud, then fold it in the batter of all the other ingredients. Heat up the pan add a little butter, place a few slices of peach in the center and pour the batter over them. Flip when the edges look solid. Hope you enjoy them.

P.S. check out the Kale Pesto if you are interested in a healthy and fast dinner.

Turnip Chips

Hi Friend,
I hope you had a nice weekend. I made some turnip chips that turned out very good, and it is so easy.
1 Turnip (makes 1 serving)
1 Tbsp Oil ( I used grape seed oil)
Salt and Pepper to taste.

Slice the turnip as thin as you can and pat dry them. Mix in a bowl with the oil, salt and pepper. Lay them out on a cookie sheet and put it in the oven at 350 for 30 minutes, but keep an eye on it. Honestly not all of them are going to be crispy, but they are still very good.

Remember this Turnip Bread?
